Cream is made from cream (otherwise known as sweet cream), that is, the top layer of centrifuged whole milk, a dairy food product. Lactose is a sugar naturally present in cow's milk (and not only). Although it's an organic substance, not everyone reacts well to it, which is why it has been removed from our product. The purification process involves adding the enzyme lactase to the milk, which, it could be said, first breaks down lactose for us into glucose and galactose. Lactose-free products may taste slightly sweeter than their counterparts.
